Hi, Amanda. There is a very good reason for your confusion! When knitting on needles you turn your work so there is a right side and wrong side to your project. However, when loom knitting you are always working on the right side of the fabric. Because of this many stitch patterns are different on the loom. You are correct that alternating knit and purl rows is stockinette st on needles, but that’s not the case on the loom; it creates garter st. Most terms are the same, but the meaning is what changes.
